Thursday: C.R.A.P. pasta w/sausage and beans

Friday: eggplant caviar w/triscuits, smoothies bruschetta, deviled eggs

Saturday: dinner @ church

Monday: roasted chicken, baked potatoes, pureed squash

Tuesday: Cranberry Pork Chops, brown rice, veggie pork chops w/sauteed apples

Wednesday: pasta primavera

Thursday: Chicken Enchilada Bread,** salad, carrot sticks [found via Homemaker Barbi] (using chicken leftover from Monday's dinner)

Friday: crockpot bean chili, Italian Bread, salad corn bread

Saturday: ???? w/Uncle On and Aunt K

Dinner This Week

Sunday: chicken cacciatore over whole wheat pasta

Monday: meatloaf, baked potatoes, green beans

Tuesday: Shake-it-up chicken nuggets,* oven fries,* lima beans 2 thumbs up

Wednesday: [Day of fast for grownups, no meat for kids] spaghetti and sauce tuna sandwiches

Thursday: C.R.A.P. we are going away for the weekend, so it may be even more craptacular than usual!

Friday: OUT - Ant P. will make ravioli and penne at ski condo

Saturday: OUT - eat at a restaurant after evening mass with Ant P, Uncle M, Uncle Ichabod and Cousin D

Note: For my own information, I updated last week's post to reflect what we really ate. This was an atypical week in that were invited over for a last minute dinner twice. Great food and great conversation in both cases. Thank you!

Breakfast Rotation

We are trying to incorporate nutritious breakfasts into our menu plan; we will try the following rotation over the next few weeks.

Sunday: kids eat cereal, yogurt, or leftovers before church; mr warillever cooks a time-intensive brunch after church.

  • pancakes
  • waffles
  • French Toast
  • breakfast casserole (that Mama prepares ahead of time)

Monday: eggs

Tuesday: oatmeal with mix-ins

Wednesday: beans and toast OR yogurt

Thursday: pockets

Friday: muffins or quickbread

Saturday: Mama and kids eat cereal, yogurt, or leftovers first thing; everyone eats an early lunch

Friday : salmon burgers on rosemary rolls, bean salad dinner @ Grammy's
Saturday : ??? chicken soup, chicken nuggets, steak fries

Meals this Week

This week, I will attempt to sketch out all of our meals. Keep in mind however, that lunch and snacks are far more flexible than dinner.

Saturday

  • Breakfast: cereal
  • Lunch: Beer-poached chicken, roasted squash, bean salad
  • Dinner: Ravioli with Butternut Squash Filling*
Sunday
  • Brunch: pancakes and sausage (mr warillever)
  • Dinner: egg rolls (prepackaged), rice, mixed veggies
Monday
  • Breakfast: yogurt, toast**
  • Lunch: Chicken soup [read Stone Soup]
  • Dinner: Meatball calzones, Collard Greens (Glory Foods)
Tuesday
  • Breakfast: yogurt with mix-ins (wheat germ, nuts....)
  • Lunch: Chicken soup with rice [read Chicken Soup with Rice]
  • Dinner: Kitchen-Sink-Fritatta -- eggs with any perishable foods mixed in, rice
Wednesday
  • Breakfast: cereal
  • Lunch: PBJ on honey wheat (on the road)
  • Dinner: at Grandmas

* Our new recipe this week is "Ravioli with Butternut Squash Filling." The recipe is from Martha Stewart's Cooking School. Don't worry, I didn't go all-Martha on you. Although the filling was prepared according to the recipe, I used wonton-wrappers instead of homemade pasta. I served it with a mixture of olive oil and melted butter and sage.

** I made a loaf of Spelt-and-Oat bread according to the recipe Jenny suggested. Delicious! Boiling the oats resulted in a very moist loaf. The spelt is very mild, and does not have the nutty whole-grain taste. If I made this recipe again I would reduce the amount of molasses, but would otherwise highly recomend it.
